Use as an acid food preservative, and its bacteriostasis is affected by the pH value of the environment. In acidic medium to all kinds of molds, gram-negative bacilli or aerobic bacilli have a strong inhibition. It is effective in preventing the production of aflatoxin and has little effect on yeast. In the food industry, can be used for the preservation of cakes, the amount of 2.5g (in terms of propionic acid).
